Taco Casserole is a quintessential comfort food. There’s a reason why casseroles like this are so popular - the ingredients are widely available, they’re simple to make, and everyone loves to eat them! And why not, when you’ve got browned lean beef, beans, corn, cheese and corn chips layered in a baking dish and baked until hot and the cheese is gooey and melty? We love the crunch that the chips add to the layers, too. It’s got all the appeal of nachos but in casserole form, so you won’t feel guilty about having it for dinner. Thomas Farms Grass Fed Ground Beef

  • 1 pound Thomas Farms Ground Beef
  • 1 large onion, diced (about 1 cup)
  • 1 clove garlic, minced
  • 2 cups marinara sauce
  • ½ cup water
  • 1 can (about 15 ounces) black beans, rinsed and drained
  • 1 cup frozen whole kernel corn, thawed
  • 1 package (1 ounce) taco seasoning
  • 2 cups corn chips, coarsely crushed (from about 9-ounce bag)
  • 2 cups shredded Mexican blend cheese (about 8 ounces)
  • 2 green onions, thinly sliced (about ¼ cup)
  • ½ cup sour cream

Instructions

  1. Heat the oven to 400°F. While the oven is heating, spray an 11x7-inch baking dish with cooking spray.
  2. Heat a 12-inch skillet over medium-high heat. Add the beef and cook until well browned, stirring often to separate meat. Add the onion and garlic and cook for 4 minutes. Pour off any fat.
  3. Stir in the marinara sauce, water, beans, corn and taco seasoning and cook for 5 minutes.
  4. Reserve ½ cup crushed corn chips. Layer the following in the baking dish: half the remaining crushed corn chips, beef mixture and cheese. Repeat the layers. Sprinkle with the reserved crushed corn chips.
  5. Bake for 20 minutes or until hot and the cheese is melted. Top with the green onions and sour cream before serving.
