Thomas Farms Pork Belly

  • ½ pound Thomas Farms Pork Belly, cut into 1/2-inch cubes
  • 3 green onions, diced and whites and greens separated
  • 3 garlic cloves, diced
  • 1 1/2 cups frozen mixed vegetables (carrots, corn, peas, green beans etc.)
  • 2 eggs, beaten
  • 3 cups white rice
  • ¼ cup soy sauce
  • 1 teaspoon fish sauce
  • 1 teaspoon sesame oil

Instructions

  1. Heat skillet or wok over medium-high heat and add the pork belly.
  2. Cook until it is browned and crispy on all sides. Remove from the pan and drain off any excess fat.
  3. Turn the heat to medium and add the whites of the green onions, garlic cloves and mixed vegetables to the pan. Stir and cook for about 5 minutes.
  4. Push the vegetables to the side of the pan and pour the eggs into the empty space. Gently mix to scramble the eggs.
  5. Next, add the rice to the pan along with the pork belly. Break up any clumps in the rice.
  6. Stir in the soy sauce, fish sauce and sesame oil and cook for 2 minutes.
  7. Turn off the heat and serve garnished with the greens of the green onions and sesame seeds.
